Welcome back!
Since I mentioned it before, I figured that i would talk about how i fixed this tasty food.
I do not have a blender to chop up ham or pork. I cheat and use lunch meat that is finely sliced.
Place it on my cutting board and mince it up finely. The boiled eggs are easy. I used to use 1,00 Island and then would mix it all up. It worked nicely.
4oz thinly sliced ham
6 boiled eggs
1/2 cup 1,000 Island
This mix on toast is great and easy. If you can think of a good substitute for the 1,000 Island, I would love to hear about it.

I genuinely enjoy eating egg salad sandwiches, ham, and tuna also. They are so easy to fix, that it is amazing there are not a lot of recipes on possible variations.
My question is this. What do you do when one of your family members cannot eat Mayo, or 1,000 Island salad dressing. The 1,000 Island makes it easy to fix the mix without a lot of worry. What do you use instead of those things, though?
I have been trying to think about that and have come up with some really strange ideas.
I have thought about using BBQ sauce - not with tuna, no thanks. I have also thought about using Caesar salad dressing, but it uses Parmesan cheese which my husband can’t eat. So, what do I do next? Haven’t figured it out, yet.

There are so many hits out in the world about cleaning up things. I have read some amazing ideas tht can help, I just wish that I could remember where they were.
There is one that my husband showed me that does work and it is neither hard, nor expensive.
To clean your windshield on your car. I learned is easy. It involves a bottle of club soda. Just club soda and your windshield wipers. The soda wish bubble up dirt that might otherwise stick, and since it does not contain sugar or coloring, there is not damage to your paint job. Of course most of the vehicles that we have owned have had no worries there as they have older cars.
Just have someone outside start to pour the soda on the glass and start your wipers. EASY

Nope, I am not talking about cutting hair at this time, although I have done that, too.
I am talking about the times that you might have onions in your fridge for too long. Have you ever seen them when they start to grow and get lots of green things sticking out of them? Believe it or not, but those onions are not for throwing away. Those green tops are great for using as season in many things. Eggs when scrambled, omelettes, soups, meat sauces, and all sorts of things can use ‘green onions for flavoring. When those onions get those green tops, voila, you have green onions.
If you wanted to start you own garden, onions that have sprouted, potatoes that have sprouted are all starts for regular plants. I like to let the potatoes grow so I can have some greenery out in front of our apartment, too. I even have a couple of potatoes waiting right now to be planted. I hope they grow. I like plants. Not always to eat, sometimes just to look at.

i know that it has been a while since I last wrote something here. There have been deaths of people we love and sickness that has interfered with any writing.
Today, I want to write about something that is very important. Food Allergies are something that can sneak up on you without warning. My husband has ended up in the ER many times because of an allergy that caught him off guard.
He is allergic to many medicines, spices, and some foods. An allergic reaction can be anything from feeling as if you have taken some kind of drug, you might feel as if you have the flu, or it can kill you. The symptoms can be all of the above, or anything in between.
If you know someone with an allergy, do not take it lightly. Being aware of the dangers can save a life - theirs, or yours.

I sat down with my Texas sister one day and with her family. We compared the types of meal that the families were used to. It was announced that I had been raised Northern. When we noticed all of the differences, I had to agree.
One thing I had mentioned was cranberry relish. Mom used to make this with raw cranberries, a food grinder, a grater for the orange peel, and an old fashioned rolling pin to break up the pecans.
Since then I have figured out a way to make this relish without all of the work that mom had to do. I cooked a bag a fresh cranberries with two cups water, when they were done, I added a package of sugar free orange jello, and a cup of chopped pecans. I would stir the mix until the gelatin (which ever brand you like) was dissolved, poured it into a bowl and set it in the fridge. It works. I will probably mention this in another of my blogs, too.

I do not really have anything to talk about today, I just wanted to blab.
That sounds pitiful, doesn’t it? Well, there is the phone, the internet (hello, here I am), family, friends. When I am in the kitchen, I usually do not talk much. I try hard to avoid messing up.
The sound of the smoke alarm going off tends to make me think that I am not cooking right. Others might feel the same way, too. Every tome that is goes off, the cats run and hide. Oh well, never said that I was an expert. Thank God.

Have you checked out the ads on the television lately?
When they show burgers, the burgers are thick and have a lot of stuff piled on them. How are you supposed to eat them? Sishkebab ( I am not sure of the spelling on that) I can understand eating one piece at a time, the skewer after all.
Burgers are best when you can get in a good bite with a little of everything that is on the bun. I have seen some burgers that look almost 2 inches thick. How do you make sure that is cooked properly? With all of the illnesses that can be found on meat, in meat, and in restaurants, thoroughly cooked food is safer than something that is partially raw in the center. I am not a cave man after all.
What is your idea about burgers?

I happen to love pickles of all sorts.
Gherkins, sweet pickles, dill pickles, polish dill pickles, pickled onions, pickled beets, pickled cantaloupe, pickled watermelon rind,…..I guess you get the idea here.
Not only do they do good on a juicy burger (that is another story), they are good by themselves. When I have a sore throat and nothing seems to help it, sucking on a pickle just like a lollipop will ease the pain in my throat. Of course you cannot always tell people to go suck on a pickle when they talk about their throats, though. They might think that you are weird or something.
I don’t care, I like pickles.

Yup, I am talking about breakfast here. Of course you could also use this for a church luncheon, a meal at home, almost anything. Putting it in a casserole dish makes it handy.
6 eggs beaten
8 ox thinly sliced ham, chopped up
1/2 onion grated
1/2 lb. cheese cubes broken up
5 medium potatoes thinly sliced, not quite like hash browns
Fry the potatoes, onion and ham in the same pan until done, drain. Place in a baking dish that has been greased. Mix in the cheese, pour the ggs over the mixture, stir gently.
Bake in a 350′ oven for 15 minutes. YUM
