Meat Loaf

I bet everybody has their own recipes for meat loaf. I love it and like to eat it often. However, I do worry about the cholesterol that can come with it. So, I’ve made some changes to what mom first taught me.

Meat Loaf

1 1/2 lbs ground meat (beef, pork, turkey, sausage)
3 eggs
1/2 c BBQ sauce
1 Tbs garlic powder or onion powder
2 c oatmeal (any type)

Mix all of the above together thoroughly.

All of the above can be put into one pan to bake in the oven, or you could divide it into two separate amounts and wrap it with foil to make cleanup easier.
Bake in the oven 350′ for 1 hour.

If you desire you can substitute ketchup for the BBQ sauce, or add Worcestershire sauce into the mix. It can be topped with BBQ sauce, ketchup, mushroom gravy,or even brown gravy if you desire, or served without any topping on it at all. Meatloaf is very flexible so it can be made to vary with each meal.

Other choices to vary could be: diced onion, diced green pepper (it will taste like stuffed peppers this way without all of the trouble) diced tomato, diced celery, shredded carrots. Your imagination is the only limit. Even cheese chunks can be added to the mixture for a surprise when eating it.

Corn Fritters

This is a recipe that I had gotten from someone else, and then I adapted it for me. I’ve had it for a while and can’t remember where it originally came from.

Corn Fritters
1 can creamed corn (14.75 oz)
1 egg
Beat above together
1 1/3 c all purpose flour
1 1/2 tsp baking powder
1 tsp salt
sift dry items together, or in my case stir thoroughly
Mix together dry and wet mixes. Drop by spoonfuls into preheated cooking oil. Cook until golden brown and drain.

These are some options to change them around a little.
5 packets sweetener for sweet fritters, cinnamon, nutmeg, allspice
when done you can dust them with powdered sugar
1/2 c cornmeal
1 tsp onion powder
1 Tbs finely diced green pepper
1 tsp dried red pepper seeds

Any variation is possible. Have fun.

Summer Squash

I know that I had mentioned earlier that I like squash, well here is another one.

Summer squash can be fixed in a lot of different ways: fried, soups, stews, casseroles, steamed, mixed with other vegetables, etc. One of my favorite ways is to sliced it thinly, dice or sliver up a yellow onion, and sauté them together in a frying pan.

After they are fixed they can be served with meatloaf, hamburger steak, fried chicken, almost anything. For a variation, you can also slice up carrots to cook with them at the same time.

Ruttmusse

I am not sure if I have spelled this word correctly. My grandmother told me about it. She was born in Sweden and tried to teach me some of the recipes that she knew and grew up with.

Anyway, Ruttmusse (root-moose is a way to pronounce it)was explained to me as a mix of rutabagas and potatoes.

Boil until tender pieces of rutabagas, and white potatoes. When done, drain them, mash them together until thoroughly mashed. Add some butter, milk (or cream), and season with slat and pepper. It is a very tasty way to eat rutabagas. They are related to turnips, but with a stronger flavor. I also like them with just themselves and butter, salt, and pepper.

Spaghetti Squash

I truly enjoy squash, Even as a child I enjoyed it. Butternut, acorn, summer, zucchini, almost any type of squash. I enjoyed many types of vegetables, especially green beans. Oh well, back to what I was going to write about. I had been given a couple of those spaghetti squash by my mother-in-law, she didn’t like them. Her loss, my gain.

Well, I looked at the recipe that was on it and thought, nope. I didn’t want to use brown sugar on something that to me would require salt and pepper. So, what I did was to split it, clean out the seeds, and then I nuked it. Thank God for the microwave! It has so many uses.

I placed it upside down in a bowl and nuked it for 4 minutes on high. When the timer went off, I got it out, it was soft, yippee. I scraped it and added some butter, salt, and white pepper. That was a great meal.
